1 (15 ounces) can low sodium pinto beans and liquid
1 (14 1/2 ounce) can low sodium peeled whole tomatoes with juice
1⁄2 cup onion, diced
1(6 ounce) can tomato paste
1 green or red bell pepper, diced
1 garlic clove, minced
2 tablespoons chili powder
1⁄2 teaspoon cumin
Combine all ingredients in a microwave safe bowl, cover with plastic wrap, cut a slit in the center to vent steam, microwave on high for 5 minutes. Remove from microwave and stir to break apart the meat.
Cover with 2 new pieces of plastic wrap, cut a slit in the center, and microwave on high for 10 minutes.
Remove plastic wrap carefully, stir, and cover again. Microwave on high for another 10 minutes.
Serve warm with brown rice or corn bread and enjoy!
