1 ½ cups unsweetened soy milk, or your milk of choice*
1 frozen banana, chopped
½ small beet, washed, peeled, and cut into sixths
½ cup frozen strawberries
½ cup frozen blueberries
Add all ingredients to a blender and blend for 2-3 minutes, or until smooth. If using all frozen produce, you may need to use “pulse mode”. Blend consistently until smooth.
How to Prep & Cook Beets: Trim greens and root end.
To cook on the stovetop: Place water and beets in a large pot. Cover and boil over high heat until tender. Peel beets with hands (wear gloves if you can because they will turn your hands pink!) or vegetable peeler.
