Zesty Bean and Cheese Quesadillas

Ingredients
1 (16 ounce) can low fat refried beans, or 15 ounces can no salt added pinto beans, (about 1 ½ cups)
6 tablespoons salsa
2 tablespoons chopped fresh cilantro
2 tablespoons minced scallion or onion
6 (8 inch) whole wheat tortillas
¾ cup reduced fat cheddar cheese, grated

PREPARATION

  1. Combine the refried beans, salsa, cilantro and scallions in a bowl and mix well.
  2. Place one tortilla on the pan. Sprinkle 1 tablespoon of cheese over half the surface of the tortilla. Spoon ¼ cup of the beans mixture over the area with the cheese, and then sprinkle 1-tablespoon cheese on top of the bean mixture. Fold tortilla over pressing together with the back of a spatula, and cook over medium heat for 1-2 minutes on each side or until cheese is melted and each side is brown.
  3. Repeat with the rest of the ingredients. Cut each quesadilla in half and serve warm.

Optional:  garnish with avocado and your favorite salsa.
